- BIANCOLILLA:The most common variety in Sicily. The oil has a light fruity, slightly bitter and spicy with hints of fresh grass and almond.
- CERASUOLA: Variety of western Sicily, cultivated mainly in the municipality of Sciacca.L’olio has a fruity bitter and spicy medium-intense, with notes of thistle, artichoke and chicory.
- NOCELLARA; Variety of choice in the olive groves of the Belice Valley. The oil has a fruity, slightly bitter and spicy, with hints of artichoke and freshly cut grass.
- TONDA IBLEA: Variety grown in the south-eastern Sicily between the province of Siracusa and Ragusa. Refers to the category of intense fruitiness, with a predominance of spicy note of that bitter and with a hint of green tomato.
